In order to introduce our local friends to some wonderful Russian food and to satisfy my own longing for thin crispy pancakes (blynis), we decided to simply cook them. Dmitry managed to get a German Sgushenka from a Polish shop in Dundee.
Milk – 500 ml
Eggs – 3
Flour – 1,5 cups
Sugar – 0,5 cup
Salt – half a spoon
Vegetable oil – 2 tbsp
Then we mixed dry ingredients and added milk and oil and cooked the blinys on the pan.
Serve with Sgushenka, cottage cheese or jam. Next time wait for Vittorio to come back from Italy.
